A that is not to say that in many ways’ modernization was kept away to maintain some traditions.

The distillery still follows the time-honoured methods of fine Scotch whiskey making, from the traditional mashing of barley to double distillation in the great copper stills where copper does conversation with the Whiskey.

Add to this the age old pure waters of the Mahanadi River, the patient maturing over decades that Tarcel High will spend in Oak casks and the meticulous hand turning of the barley with the traditional SS malt shovel and you have a subtle warm and smooth whiskey, will be one of the finest in the world. The whiskey matures as before for years in oak casks, that have previously been used for bourbon or sherry drawn for this memorable and aggressive malt, before the spirit is judged ready for bottling, contributes to the endearing aroma and flavour of the brand Tarcel High.

The whiskey matured in the finest Spanish and American oak casks, rest here undisturbed for anything between twelve to forty years. This develops the final character and subtle differences within the range of Tarcel High Single Malts. Malt have specific flavours and special nuances because of the wooden casks. . 

However, the porous casks will reap the benefit of the moist and fragrant Odisha Humid atmosphere. The product will be of purely vegetable deposit, not highly decomposed and is devoid of sulphur or any other offensive mineral.

 
A Ruby red jewel, a careful mixture of first fill oak bourbon barrels give it a sweet spicy flavour and first fill sherry butts provide a smooth richness to the whiskey, known for its mellow deep-toned aroma, a strong fruity flavour & a smooth finish.

 
The initial maturation process however is in bourbon barrels sourced from North America, helps the whiskey to mature and add their unique touch to it. The resulting whiskey has its trademark rich & spicy characteristics, has an exquisitely smooth, creamy texture, with just a hint of nutty flavour.

 
The wooden casks have the greatest influence on the flavour of Vintages. The size, style and previous use of the casks and duration in the cask are important.
The distillery will determine it’s bottling by vintage rather than year, will produce an award-winning Single Malt Whiskey, will be renowned for the glorious bouquet and natural golden hue.

 
Besides this, bottling of the single malt in the pure form, Tarcel High whiskey will be used in the blending of Famous Grouse. The makers attribute the special flavour and smoothness to its altitude, remoteness which has traditionally meant unhurried distilling, humid climate, and natural elements. The clear mineral rich water used from Mahanadi, is acknowledged to be a major contributor to the subtle flavour. A complex and subtle flavour and bouquet combines a fragrance of fresh rich fruit cake, chocolate and orange leaving the smooth taste of soft berries, spice and cinnamon.
